This farm is on the western shore of the glacier carved Hood Canal. The water is more clear and colder than other waterways of Washington. Most oysters from the Hood Canal have a high content of salt but these oyster have a sweetness to them as well. They are farmed in an extreme weather area that create a tumbled oyster without all the unnecessary farming equipment in the water. It takes 2-3 years to get a market sized oyster here. This slow growing and high weather area creates our highest quality oyster. This is the best oyster we sell and you can tell the minute you see it that we work hard to make it the best. This oyster is available in sizes ranging from 1.5 inch to 6 inch depending on your customer's needs.
Pickering Passage is and area in the Puget Sound near Harstine Island and Shelton. It has a more flat beach where you can harvest even during poor tides. These have a hard shell with a decent cup and great meat to shell ratio. They are farmed by a supplier that we have supported for many years and is owned by a long time friend of Mr. Padden. He takes pride in his work on the farm and runs a family operation. The oysters have a mild salty taste and slight earthy after taste.
We buy from several farmers on Totten Inlet that we have supported in various ways. Their companies are family owned and operated. The owners have lived in the area they farm nearly their entire lives and create an excellent oyster and manila clams. These oysters and clams are very sweet and have a moderate salty taste. They have good cups with excellent meat to shell ratio.
This area is in the northern part of Quilcene Bay. The oysters have a high salinty and are hard shelled. They have a melon taste and deep cups. These are farmed on the ground with cultch spread on beach.
This beach is located across the water from where the owners wife grew up. These are excellent oysters grown on the ground but still retain a great cup and excellent meat to shell ratio. Customers often say it has a real wild taste. This area can grow a market sized oyster in one year.
Skookum Inlet is an area for the lower end market. The oysters grow fast here and typically have a thinner shell and have a muddy taste. These are great for buck shucks and due to the quick growing season are cheaper to purchase.
Harstine Island is in the Puget Sound near Shelton and has a typical market oyster. Its not above or below average, it's just average. Customers buy this for a different taste profile which is sweet cucumber and mild salt.
